In 1872, the originally Swiss bakers’ family Punselie started a cookie bakery in Gouda. Their ruitjes, short biscuits, shortbread and Gouda treacle waffles are now inextricably bound up with the Gouda heritage. What was once a pioneering family business is in these modern times faced with growing demands from the inspection and new marketing techniques. But under the passionate supervision of grandson Ronald, they still bake 40,000 cookies an hour. A tribute to the resilience of a small family business.
